Everyday Tuna Poke!

After 7 years in Southern California I became more comfortable with preparing fresh tuna dishes than I was during my prior life working and traveling throughout the Midwest. Though there were spots to find tuna well prepared like Roy's or Japonaise in the the day, so many places were constant disappointments. Many times it was the simplest of preparations with a high quality tuna that made me the happiest.

This is my approach to delicious simplicity. This represents my favorite ingredients that are readily available, but getting the proper tuna is essential and one good on-line option is Thrive Market, but if you have a local fish purveyor even better. Below is a simple chart that gives you an idea of quality + pricing.



Ingredients

1) 6-8oz tuna of your choice (hopefully Toro!)

2) 2 tbls toasted sesame oil

3) 2 tbls fresh fine chopped cilantro

4) 1/8 tsp smoked sea salt

5) 1 tbl black chia seeds

6) pinch of fresh ground pepper

7) 1/2 large avacado (no black or brown spots)

8) 2 fresh lime wedges


Preperation

Using a sharp knife, chop the piece of tuna into 1/2 inch to 1/4 inch pieces. Let the knife do the work and do not put force on the tuna, it is a fragile fish. Place the chopped tuna in a proper bowl and add ingredients 2-6 and gently hand mix or use a wooden spoon. Blend well so the tuna is blended with all ingredients. Chop the avocado into 1/2 inch to 1/4 inch pieces and add to the tuna mix and then squeeze one lime slice over the entire mix and gently blend the poke. The poke should have a shimmering look from the oil, but not white or stringy. It is always best to mix with your hand to not bruise the fish or pulverize the avocado.


Service

I have served this poke with a number of sides. This version was served with whole grain crackers, lime wedge and grilled truffle asparagus. There are many won-ton options, grilled naan or a healthy crisp are all good options. Jasmine or Forbidden rice is always good and I like to make a simple cucumber salad on the side. Sushi ginger is fun but not needed with the delicious flavor of the poke! This is a fun recipe to share with guests for a light dinner or party snack!
